Smashed potatoes are awesome! It’s insanely easy to make and again, another recipe that utilizes the random leftover ingredients accumulated from previous cooking endeavors. I found myself with four mini red potatoes so I decided to try the very popular Pinterest pin on smashed potatoes.
It’s very simple – you just scrub the potatoes, and place them on a tin with water on the bottom and cook in the over for 30 minutes.
Once they been warmed up, you take them out and let them cool for a couple of minutes (the original recipe suggests 1o minutes). Then the fun part starts! You take a cup (I used a larger plastic cup) and use the base of it to literally smash the potatoes open. Once they are open you simply put some oil and spices on them and place them back into the oven for another 25 minutes.
These are a very fun and minimal effort dish to make! It takes a while to actually cook them fully so that they are brown and crispy on the outside, but worth the wait! This is actually the second time that I have made them recently and my roommate and I have loved them both times! You could easily adapt these to add cheese or whatever spices you felt like having or even making them mini loaded baked potatoes. So many possibilities with such a simple little idea! I love it!
