Peanut butter Protein Bars

Anyone who knows me knows that I have a somewhat unhealthy obsession with peanut butter. It’s so delicious and I am constantly looking for excuses to eat it. That’s why when I found this recipe, I knew I had to make it. It is supposed to be a breakfasty type bar from Chocolate Covered Katie.

Peanut-Butter-Protein-Bars---5-ingredients._thumb_4It has only 5 ingredients and requires no baking.  All you do is mix together, mold, and chill.

CAM00144I was out of brown sugar (which is one of the 5 ingredients that it calls for) so I used a honey, maple syrup, and Stevia substitute. I don’t believe that it took away any of the intended flavor but it might have messed with the intended texture.

CAM00156 CAM00155This was also the protein powder that I used. All I did was mix all the ingredients together and shape them into bars. I then froze them. They have been in the freezer since then.

CAM00152 CAM00150Having now tried the bars, I can’t picture them being a breakfast bar or even anything outside of a frozen peanut buttery treat. And that’s probably because I didn’t have the actual brown sugar to create the correct texture. However, the taste was superb! They turned out delicious even without brown sugar!

CAM00194 CAM00197Will most likely make these again! Super simple and really, any excuse for peanut butter is good enough for me!
